When I think of favorite foods, the list is long. When I think of bringing them to cookies, I start with flavor combinations. Then I consider texture. Next, I sketch out possible recipe approaches and narrow down to two or three to bake. Each recipe is baked and tested three times. If in the three, there's a great cookie (a good cookie isn't good enough) I bake it again a few weeks later to see if it still matches the initial intent of the cookie. What are the criteria? I base them on words related to the original food or flavor as well as themes such as familiar, fun, and flavorful. I don't think about other cookies. I think about a place and a moment where the cookie will be. I think about language, about relationships, and about conversation. Will this cookie add a little zest to someone's day? --Kelly
